Spend a full day exploring the labyrinthine streets, treasure-packed souqs and colourful medina of Fez. Founded at the beginning of the 9th century, and barely changed since, this enchanting city has been a seat of government, philosophy, medicine and religion and is the best surviving example of an ancient Arab city.

See the 'new' city, established in the 12th century, and explore the 2,000-year-old medina, where donkeys and mules laden with goods still trawl along the web of streets. Visit some of its wealth of museums, including the Wood Museum and Museum Batha with its impressive collection of ceramics.

Head into the heart of the souq to search for slippers, jewellery, ceramics or famous Moroccan carpets. Visit the Jewish quarter, stopping by the synagogue and seeing the city's vast rampets. Pause at the Palace gates to admire this giant structure, then learn about the work that goes into traditional Berber carpets at a special demonstration.

Head to a pottery cooperative to see how local ceramics get their distinctive cobalt blue finish, before enjoying a cup of coffee from a medina local cafe.

Feast on a traditional lunch in the ancient city, then leave the souqs behind and head to the multicoloured tanneries. Climb to the top of the Merenid Tombs for a spectacular panoramic view over the city, stretching from Borj Sud in the south to the rolling hills in the north.

Next it's on to the Medersa Bou Inania, an educational institute that was built between 1350 and 1356.   With final stops at the Mausoleum of Moulay Idriss II, the Medersa Cherratine and the Al-Qayrawan Mosque, this is a tour of Fez that will get you completely under the skin of this captivating city.
